On Sunday, March 15, the world’s most famous stars gathered in Hollywood for the 98th Academy Awards. While most of the conversation focused on the major wins—like One Battle After Another beating out Sinners for Best Picture—a team of 200 chefs was focused entirely on the food.

Once the ceremony ended, guests headed to the Governors Ball to enjoy a massive feast. You can hear them coming, and you know it’s go-time, explained chef Elliott Grover. This was the fourth year that Grover, the head chef at London’s 45 Park Lane, was asked to cook for the prestigious after-party.

He worked alongside legendary chef Wolfgang Puck, who has been in charge of the event’s catering since 1994. Grover admitted that working with Puck can be a bit unpredictable.

He is very fun, but he’s crazy, so I go in with the mental preparation of knowing something will change, he said. In fact, Puck is known for making major adjustments to the menu just days before the event.

While fish and chips were planned well in advance, the roast beef in Yorkshire puddings only got the final approval a few days before the ceremony. Grover noted that the fish and chips are always a huge hit with the crowd. We get slammed on the fish and chips – and thankfully it’s the easiest thing to make, he remarked.

The version served to the stars is a more elegant, bite-sized take on the British classic. Instead of being wrapped in newspaper, the dish consists of a few crispy chips and a small piece of sea bass topped with tartare sauce.

Grover chooses the fish based on what is freshest in Los Angeles at the time. In previous years, he has also served Wagyu beef in Yorkshire puddings and even a complicated beef Wellington.

Grover first got the job simply by being brave enough to ask Puck for an opportunity several years ago. I asked if I could go along, and Wolfgang said, ‘Yes, why not?’ he remembered.

Now that he is a regular part of the team, he feels much more relaxed about the high-pressure environment. He no longer spends days over-preparing and instead trusts the process as it unfolds in the kitchen.

Even though the guests are some of the wealthiest people in the world, their requests are often quite simple. The most popular item they ask for off-menu is usually just a side of plain chips.

This year, the special British-themed dishes were exclusive to the 1,200 invited guests at the Academy Awards. The kitchen stayed busy for 16 hours on the day of the event to ensure everything was perfect.

The film One Battle After Another, which won Best Picture that night, has been a massive critical success for director Paul Thomas Anderson. The movie features an ensemble cast including Leonardo DiCaprio, Sean Penn, and Benicio del Toro.

It is a 1970s-set thriller inspired by a classic novel, and it ended the night with six total Oscar wins. DiCaprio, who played the lead role, was a major presence throughout the awards season.

Meanwhile, Michael B. Jordan also had a historic night, winning Best Actor for his dual roles in the vampire thriller Sinners. The movie, directed by Ryan Coogler, arrived at the ceremony with a record-breaking 16 nominations.

Jordan has been very busy lately, as he is currently working on the fourth installment of the Creed franchise. He is also set to star in a remake of The Thomas Crown Affair, which is currently in pre-production.

Both One Battle After Another and Sinners have been credited with bringing audiences back to theaters in large numbers this past year. These films, along with the star-studded after-party, made the 98th Oscars one of the most memorable in recent history.
